Also of note is that the transfer to Sun and Moon is one-way no matter what.
This is most likely due to how Hyper Training works - they don't actually set your IVs to maximum. Instead, they check a flag to make it act like your IVs are set to max - the actual values remain unchanged, letting Hidden Power remain the type it was before. Trading them to the Gen VI games would most likely erase the data, causing endless woes on losing the effects.

Dammit!! I didn't notice my DS battery was going dead and just lost several hours of play. I was in the middle of second challenge of the third island. Now I'm back at the Pokemon Center after returning the professor's mask.

You didn't overlook it, just not know about it - IIRC it's only available post-game. If it is available pre-post-game, it's essentially locked to post-game, since you need a level 100 Pokémon to actually use it.
You trade in Bottle Caps (rare items in and of themselves) to a guy, who then lets you max out your Pokémon's IVs - one of them if you trade in a regular bottle cap, all of them if you trade in a Gold Bottle Cap (which are even rarer).

I think I knew a little, like bottle caps and Hyper Training in itself doesn't sound too alien, but I probably never paid much attention to it. Not that I liked the games in the first place, the sequels were better but still not very enticing to me.

Yes.
Super Training upgrades EVs and can be done at any time to any level.
Hyper Training upgrades IVs, can only be done at level 100, and forcibly maxes the IVs.
