Does all of Zelda's fighting take place in the Overworld, unlike Final Fantasy's?

Define "overworld".

If by "overworld" you mean that it doesn't shift into a separate battle scene, then yes, it doesn't. (Because Zelda's an action-RPG type thing, rather than Final Fantasy's turn-based RPG.) (this also doesn't count Zelda II, where you shift into a separate, side-based battle screen when you encounter an enemy on the overworld)

Then I'm pretty certain I prefer action-based RPGs over turn based. Or so that's the feeling I'm getting VH. I like having that extra dimension of strategy.

You should take a look at some gameplay videos to answer that question. It's not turn-based in any way. Lief explained it really well.

Since Lief answered my question so well, I have no need to watch any video. I've already got a good guess that I'll enjoy my time with the Zelda game I got.

You're gonna have a lot of fun with it.  It's one of, if not the best Zelda handheld game to date, in my opinion.
