Don't have my game handy at the moment, but I have trained a Volcarona, Scizor, and Gyarados, and some of the stats did seem a bit lower than what Smogon and Bulbapedia say are the minimum...

Yep. Worked hard to get them there battling the Elite 4, plus, Join Avenue helped out a ton with the EVs.

Nope, they have minimum with negative nature, minimum, maximum, and maximum with positive nature.
So here's the three that I trained recently:

Maxed out the EVs on Attack and Speed, so if I'm looking at it right, this is what Smogon says it should be:
HP: 331
Attack: 349
Defense: 194
Special Attack: 140
Special Defense: 236
Speed: 287
So yeah, biggest differences are in Special Attack (but that's not important) and it's Speed...
- Scizor:
- Adamant nature (Attack up, Special Attack down)
HP: 329
Attack: 380
Defense: 212
Special Attack: 121
Special Defense: 171
Speed: 138
Maxed out EVs in Attack and HP, so this is what it should be:
HP: 344
Attack: 394
Defense: 236
Special Attack: 131
Special Defense: 196
Speed: 166
So yeah, quite a few differences here...

- Timid nature (Speed up, Attack down)

Defense: 143
