They're bonus bosses that show up in Norende when you connect with people. IIRC if you lose you just get booted back to where you were, but if you win you can get stat-boosting items.

Soooo.... I think I'm gonna give up on the demo and move onto the full game now. I tried to defeat the dragon again earlier and got wiped out once again... I don't feel like grinding just to beat a demo to earn a few extra things, so yeah, I'll start the full game soon.
Quick question: Do I need to keep the demo once I've gotten the rewards, or can I delete it to have more space?

You might need it to reap its rewards for future playthroughs, but considering that it has a New Game+...

Yeah, I'll just delete it. Looking over the rewards, they're not the greatest, and if I ever do replay it, I doubt I'll miss having a few extra items I can just buy myself later in the game.
Also, by deleting it, if I do decide to get the rewards again, I can do the villager glitch thing and have the maximum amount.

- God DAMN that faux Frenchie merchant asshole was hard to beat. Bastard kept defaulting and then spamming money at me, KOing Anges and Edea.
Barely won with a near-dead Tiz and Ringabel.

It allows you to carry over data from a cleared game into a new one.
Unlike most examples, you can pick and choose what you carry over, from a pool including:
