Yeah, apparently it unlocks hard mode when you enter the name of the protagonist as your name. I didn't actually play with it, but when I found out the name of the character, I thought about using it, but decided not to when it told me "Warning: this name will make your life hell."
After googling what that meant, I found out that choosing that name has the late game monsters throughout the game from the beginning (or something like that).

Hard mode's kind of a joke mode. It ends after you fight Toriel.

If you do a Pacifist run the first time, you'll get the Neutral ending and the final boss will tell you how to get the Pacifist ending if you spare them. Then you can reload from right before the final boss and go and meet the Pacifist criteria. If you do a Neutral run first, you'll have to start all over to get the Pacifist ending, but you won't have to fight the Neutral final boss in your P run. (iirc, anyways. I've only ever done it the first way)

- Though, being able to meet all the criteria in the second run requires you to tell Asgore you have other things to do first and head back out through the Core, if TVTropes is correct.

I'll probably spare everyone and then just go through the multiple endings in one run. Not much difference between them, right?
Now, if I ever do genocide, would I have to simply delete my save, or delete the entire game and redownload it to get rid of the evil spirit?

Not really, unless you're aiming for a specific version of the Neutral ending. (the Neutral ending changes depending on who you kill or befriend)
I've heard you'd have to uninstall the game. But fortunately, the game gives you time to do stuff in between the Genocide final boss and the ending so what I plan on doing is beat him, save, then watch the ending on Youtube and restart, so that my game doesn't get corrupted. (I think that'll work, anyhow)
