What you just saw is called Diesel Engine Runaway. While the actual cause varies (in this case because the fuel rack is frozen), the result is the same. The engine starts consuming its own lucubration oil (which has the same energy content diesel fuel) and then accelerates out of control until something gives, the engine seizes up due to lack of oil or somebody manages kill the engine, usually through blocking the air intake. To give a sense of just how fast a runaway is, an engine that normally operates at 1800 RPM can go 5000 RPM or more.

Whoa. That is crazy!

I figured he was blocking the air intake on the video, but I'm guessing it was probably too late for that truck...

Not quite, if you can stop the engine quick enough, then you can save at least part of the engine. Usually if this happens and you do stop in the engine in time, you're just replacing a few parts and the turbo. But if you do not stop the engine in time (or just let it run till it dies), well, I'll let this guy explain what happens.
